When planning meals, it's important to simplify and organize them.

I normally do this in 3 day increments.  Every 3 days, I prepare the staple foods that will be used for my diet. I always make a large pot of soup or stew, chop my fresh vegetables, prepare a high quality protein (roasted or broiled meat), a faux granola snack, and a fresh salad from which to plan my meals around.

Breakfast can be a confusing meal for people with grain, egg or dairy sensitivities (of which I have all). The first thing you must do is throw out all preconceived ideas about what breakfast food is.  Breakfast is an important meal and it's essential to get vegetables, high quality protein and good fats in every breakfast.  If I haven't scared you off yet, then you're welcome to read on and learn how to eat healthy and find satisfaction with your new way of life.

I'm letting you take a look at my personal grocery list.  Below are the items I find essential to have in my kitchen at all times. With these few foods, you will be able to create a multitude of delicious meals, as well as quick and easy meals for when you're too busy to cook.  I occasionally purchase other foods for special meals but on a day to day basis, I rely on this list for most of my needs.  If you're able to have eggs or dairy, feel free to add them to my list.  If I could partake of such delights, I would and I envy those of you who are permitted such joy.  So, be gentle with my soul whenever you mention cheese.
It's important to be prepared in advance. This eliminates the temptation to eat quick foods that aren't good for you.

I recommend finding airtight containers to separate your fresh vegetables in.  Wash your celery (save the leaves for your soup), carrots, cucumbers and peppers.  Slice them thinly and place in separate containers.  These containers can be stored in your refrigerator.  The amount of vegetables required is based on your personal appetite and how many people you're preparing for.  For one person, I find the following quantities to be sufficient:  2 large carrots, 4 stalks of celery, 1 cucumber and 2 red peppers.

Prepare our healthy and delicious granola recipe next.  This will consist of 1 part nut butter to 1 part coconut cream concentrate with an equal amount of seeds or chopped nuts.  After mixing all the ingredients and salting and adding Stevia to taste, place the mixture in a Ziploc bag and flatten.  Place the bag in the refrigerator.  When the mixture has hardened, break it up into small bite sized portions. It's important to keep granola refrigerated. This granola can be used throughout your day when you feel you need a little snack. It also takes care of any sweet cravings you might experience as you begin your new diet.

Now it's time to work on a pot of stew or soup.  Soup is a great way to get all you need in one bowl.  I love to have a large pot of soup around so I have something quick and easy to go to if I'm in a hurry.  This soup is what you will learn to rely upon as your 'fast food' replacement.  My favorite soup is quick and easy.  I start off with 2 cartons of chicken broth, 2 cartons of vegetable broth and 1 container of sugar free salsa (I use the Trader Joe's salsa in mine).  I chop 1 onion finely, the celery leaves, kale, and a couple cloves of fresh garlic and place in the broth.  After this has been done, you can put any and all of your "favorite vegetable" in to the pot and season to taste.  If you want your soup to be a complete meal, add a whole chicken or 4 chicken parts to the pot.  Let it cook until the meat is tender.  At this time, remove the meat from the bone and put the meat back in to the soup base.  This soup can be used for your breakfast every morning and your meal replacement for those days when you don't have time to cook.

I understand this is a major lifestyle change
and want you to know there's hope.

The best thing to do is focus on what you can eat and not on what you can't.  In the beginning, you'll be reading labels like crazy in the stores.  So, plan for shopping to take a little longer than it used to.  Eventually, you'll know what foods work for you and your life will simplify immensely and your shopping too.  If you need help converting a recipe you love, send it to me.  I'll do my best to help you.  You're starting an amazing journey and I'm here to help you.  So, feel free to e-mail or call me at the office.
